The Kitchen | The best summer dressing.

I don't know about you guys but for me, dressings are the most illusive element to building an amazing salad. I tend to shy away from bottled dressings from the grocery store because I have yet to find a truly great one. Typically I do the lemon juice + dijon mustard + olive oil + S&P thing, occasionally I add a little bit of chopped shallot or roasted garlic but for the most part I keep it simple and semi satisfying. 

Last weekend my parents were in town for a visit and to celebrate their anniversary so I set out to make a fancy dinner at home to commemorate the occasion. After flipping through my favorite cookbooks the dinner started to take shape with the only mystery element being the salad. Suddenly I remembered a recipe I had stored away in a recipe book- this dressing was served to me on my orientation weekend for grad school, everyone was over the moon for it and I cornered the chef and had her write it down for me before I left. I have made the recipe exactly once, tucked it away and forgot about it. What a mistake that was. 

It is fresh, bright, and outrageously good. This is the type of dressing you can use as a sauce for a flaky piece of white fish, drizzle over your tomato mozz salad for a more immersive basil experience or simple put out as a vegetable dipping sauce. Since making it I have been sneaking tastes of it on a cracker between meals because it is honestly that good. 

When making the recipe this time I adapted it a bit to include less oil because I tend to like a lower oil : acid ratio but feel free to add some extra if it the dressing is a bit strong for you. Here is the Where's Mer version of the Chanel Rock Dressing just in time for that salad you are bringing to your MDW party!

Chanel Rock Basil Dressing

Ingredients:

  • 2 c. Fresh Basil
  • 1/2 c. Fresh Italian Parsley
  • 1 Lg or 2 sm cloves of garlic
  • 2 tbs apple cider vinegar
  • 2 tbs balsamic vinegar
  • 3 tbs honey
  • 1/2 tbs pepper
  • 1/2 tbs salt
  • Juice of half a lemon
  • 1 cup olive oil

Directions: place all ingredients in a powerful blender and blitz until smooth!
